Healthy Oatmeal Bars


  • 3 medium sized ripe bananas
  • 2 cups of Quaker quick oats
  • 1 cup of unsweetened shredded coconut
  • 1/4 cup of maple balsamic (stir ins such as dark chocolate chips, nuts, berries are optional)


Preheat oven to 350. Spray a small baking dish with cooking spray. Mash the bananas in a medium sized bowl, stir in the quick oats and coconut. Next stir in the maple balsamic. Spread evenly in prepared baking dish. If you wish press some extra shredded coconut on top of mixture. Bake for 20 minutes. Let cool and enjoy. I cut them into bite sized pieces and refrigerate them for storage.
